Our vision

Striving for better gastronomy for guests and entrepreneurs

The whole industry has been undergoing a transformation in recent years, primarily due to post-covid changes in the behaviour of us, the guests. Gastronomy has a technological debt that it needs to catch up. Equally, generational renewal brings new needs to the business.

Doing business in the hospitality industry is very demanding not only in terms of time but also in terms of complexity. We want entrepreneurs in the industry to be happy and to be able to do what they enjoy and what they know. Technology helps them solve the rest. We want to be very active and become the ones who can best address their technology needs.

However, the hospitality industry must keep its human face, brought by enthusiastic entrepreneurs. On the other hand, modern tools that allow people to focus on what they are best at can be of fundamental help in activities where it makes sense.

How we work

We are close to founders

We strive to contribute to their success from day one, even before the investment. After two decades of building companies, we know well what truly matters and what is a waste of time. We invest according to the "fewer projects, more focus" principle.

We invest our own capital

That means the ultimate 'skin in the game'. This commitment allows us to break free from the traditional funding cycles that typically demand shareholder payouts within a five-year horizon.

I see gastronomy as a sector that is structurally underinvested and, at the same time, extremely demanding on operational efficiency - that is why it offers room for meaningful innovation with real impact. My projects focus on growth strategy, financial management and investment evaluation, but I often go executive when there is a need to support change on the ground. I enjoy finding ways for technology and data to help businesses grow smartly and healthily - while creating an environment where every link in the chain has a clear value proposition.

Pavel Nosek

After years of law practice, where I specialised mainly in competition law and transaction advisory, I naturally moved into the field of investments. At Miton GastroTech, my primary focus is on acquisitions, structuring transactions and setting up internal processes including reporting. I particularly enjoy working where law meets business and where there is a need to analyse and make strategic decisions.
